This recipe was inspired by our curried tofu taco night. The taco was just lacking…something. It longed for an exotic flavor that didn’t overpower the dish. I wanted freshness and crunch to pair with the soft tortilla and tofu. Cabbage on it’s own just wasn’t cutting it…it would have needed a sauce, almost like a fish taco-type. But I didn’t have the time. Instead, I cut up some green onions and cilantro to add to the top of my taco. And voila! That was it. I was obsessed.
Because of this day, you will never again be able to open our fridge without seeing a gallon size Ziplock bag full of this mix ready for use…on everything. Truly, there is nothing easier to make. So I’m weird because I LOVE coleslaw but I loathe red cabbage at least! Maybe it makes all the difference that it’s red! Anyway this sounds so yummy.

I’ve honestly never eaten cabbage, and I’m still not convinced that I should! It’s got a lot of great health benefits, but I don’t know that I’m a big fan of the appearance of boiled cabbage. Based on your information, though, I may have to find another way to prepare it so that I can gain all of the perks from eating cabbage.
Appearance wise, boiled cabbage is not pretty. But I do love it…especially with mustard. 🙂
I like to make this soup with none of the spices, so that I can’t get bored of it- when I heat it up I add a little dash of red curry paste, cayenne and pepper, lemon and ginger, etc based on my mood and cravings.
does anyone know how often you can do this diet? I know you can’t do it longer than 7 days at a time but it is safe to do once a month or so with healthy eating in between?
